Talamus - Traditional Taste Lab of Mugello PDF Print Email

 In 2006, in Palazzuolo sul Senio, Talamus was founded. It is an association born from  the following aziendas:  Ercole Lega della Locanda Senio with the Azienda Agricola Badia di Susinana, Berti Cutlery in Scarperia and the Unione Italiana Ristoratori (Italian restaurant union). It is the first cultural, educational laboratory in Mugello dedicated to the production of traditional foods from the territory,  and the promotion of Italian regional cooking.

TALAMUS has a fully equipped cooking lab for the live viewing of every phase of the cooking process. The kitchen is 100 square metres and can hold up to 10 cooks, while the class, which includes a taste lab, has 80 seats and desks. Nearby, there is a whole area that is dedicated to the production of the marrone, a typical product of the Mugello territory.

TALAMUS offers specialized courses and lodgings for amateur and professional cooks, and food-fans in general, who want to learn more about traditional local dishes. Authenticity and excellence is guaranteed by the use of typical quality foods, DOP and IGP listed products, but also by a preparation process that reflects and makes use of the local traditions, customs and training that have been passed down through the centuries.

Who can participate?

  1. RESTAURANT OWNERS AND FOOD SUPPLIERS AND BUYERS that can use the prepared and finished products from the course (like products derived from the medieval pig or the marrone chestnut) in their shops and restaurants, and that wish to perfect recipes and improve Italian regional cooking methods.
  2. HIGH SCHOOLS AND TOURIST OPERATOR COURSES (in food & wine management) interested in preparing specialized workshops in Italian regional cooking, and also benchmarking, to compare with the excellence of a traditional lab where a "historical" production process is used to prepare pork and marrone.
  3. Italian or foreign VISITORS/TOURISTS/ GOURMETS who are looking to discover new territories and traditions, who do not merely want to learn about regional cooking methods and techniques, but who want to buy local products, discover "age-old methods", and have an unforgettable experience as they themselves participate in the production  process of certain foods.
  4. ELEMENTARY AND MIDDLE SCHOOLS that are interested in teaching the young a new approach to food and the value of local products
TALAMUS is situated  in the heart of Mugello, in the Azienda Agricola Badia di Susinana, in Palazzuolo sul Senio. The farm is situated on 1159 hectares of land in which we can find 20 km of paths that wind through the fluvial Rio Cesare Park, Ari Lake, chestnut woods, organic crops, and the ancient Susinana Abbey

The Azienda Agricola Badia di Susinana offers its guests accommodations, as does the Locanda Senio, the hotel which is situated in the heart of Palazzuolo sul Senio.
